Dukkah Recipe's for the Famous Four

1. Danderoo Dukkah

Try the following with your Danderoo Dukkah:
1. Roll a wheel of soft cheese into the dukkah and let stand for 40 mins. Then consume with red wine. If you are
unable to wait slice the cheese into small pieces and use in place of bread and oil.
2. Crust pork fillets and bake
3. Great on roast sweet potato.

2. Wartaka Dukkah

Try the following with your Wartaka Dukkah:
1. As Wartaka has some Lemon Myrtle it combines very well with fish.
2. If you do not wish to use an oil try using a commercially available dip and rice crackers.
3. Use in scrambled eggs or omelets.

3. Traditional Dukkah

Try the following with your Paddymelon Traditional Dukkah:
1. Sprinkle on wedges straight from the oven
2. Top baked potato with a combination of brown lentils and traditional dukkah
3. Sprinkle on the top of pumpkin soup.

Kath Wilson's famous salad recipe using Paddymelon traditional dukkah and macadamia oil

Toss in a bowl:

one large or 2 small beetroots, peeled and grated couple of sticks of celery or half
a head of fennel, finely chopped bunch parsely, finely chopped, or dill if you don't use fennel
few spring onions or one spanish onion, finely chopped 1 large or 2 small apples, grated
(optional extra: grated carrot) 3 tablespoons Paddymelon traditional Dukkah

Dressing: Make a vinegrette using equal parts WHITE balsamic vinegar
(I use Carlo Magno's with grape must, available at David Jones Foodhall), and Paddymelon Cold Pressed Macadamia Oil. (If you can't get hold of the
white balsamic, mix equal parts white wine vinegar with mirin or verjus.) Infuse a sliced clove of garlic in the mixture & remove.
Shake/stir the vinegrette, pour over the salad and toss. If you like, squeeze half a lemon over it.

People invariably gasp: "WHAT is in this salad! It's DELICIOUS." It's a
particularly good winter salad--a sweet and fresh accompaniment to
stews & cous-cous...

4. Nile Delta Dukkah

Try the following with your Nile Delta Dukkah:
1. Mix with yogurt and apply to lamb kebabs
2. Roll a hard boiled egg in dukkah and use in a green salad
3. Crust chicken breasts. When cooking add some lemon juice to prevent spices burning.

Melinda Wharton's chicken and Paddymelon Nile Delta Dukkah Parcels

Use frozen puff pastry, 1 sheet per family member in the centre of the parcel place :
cheese (sliced or grated)
grated carrot
grated zucchini
sliced mushroom
broccoli forret
a piece of chicken breast (raw)
a couple of dollops of cream
and 2-3 tbsp of Nile Delta Dukkah

Wrap corners into the centre using a dab of milk to join pastry. Paint parcel with cream, pierce and sprinkle with sesame seeds and poppy seeds place in pre-heated oven 180 for 40-45 minutes.
Serve on a bed of rocket leaves or salad....delicious!!!!
