Bush Tomato

Paddymelon Bush Tomato Dip

Ingredients:
300 ml Sour cream
4 tablespoons tomato paste
1 teaspoon sea salt
1 teaspoon Dorrigo Pepper or half tablespoon ground Pepper berries
2 tablespoons Bush Tomato
1 teaspoon garlic flakes

Method:

1. Combine ingredients in a bowl
2. Beat together, or use mixer for about 3 minutes until all ingredients are well combined and uniform in colour.
3. Refrigerate until needed.
4. Enjoy with crusty bread.

Note Bush tomato flavours mature with time so make dip a day ahead.

This soup may be reduced even further to form the basis of a pasta sauce. The bush tomato flavour will strengthen with time, so it is advisable and convenient to make this soup on advance and heat to serve. Serves 6

Ingredients:
1. 200g bush tomatoes
2. 10 dried native pepper leaves
3. 20 ripe tomatoes
4. 2 large onions, finely diced
5. 1/2 cup olive oil
6. 1 teaspoon salt
7. fresh basil leaves to taste

Method:
1. In a food processor, grind the bush tomatoes and pepper, bring a pot of water to the boil and immerse the tomatoes for 30 seconds, lift out and peal, chop coarsely.
2. Sautee onions in olive oil in medium size saucepan over medium heat until soft and tender. Add chopped tomatoes, cook for 10 minutes, add ground bush tomatoes, native pepper and salt. Cook for 45 minutes over low heat, stirring occasionally. Add fresh basil a few minutes before the end of cooking time. Remove from the heat and puree until smooth. To serve, accompany the soup with a small pizza brushed with macadamia oil topped with goat cheese, basil and a good sprinkling of ground bush tomato or twist some puff pastry into sticks, brush with a little butter, parmesan and ground bush tomato.

Excellent over grilled chicken, steak or tossed through pasta shells. To make 2 cups (500 ml).

Ingredients:
1. 1/4 cup white vinegar
2. 1 teaspoon salt
3. 1tablespoon castor sugar
4. 3 small red chillies, finely chopped
5. 2 teaspoons ground bush tomato
6. 10 large ripe tomatoes, finely chopped
7. 2 onions, finely chopped
8. 2 cloves garlic, chopped


Method:
1. Add 2 tablespoons olive oil In a medium sized stainless-steel saucepan, bring the vinegar, salt, sugar and chillies to the boil.
2. Add the ground bush tomatoes and cook for 10 minutes on low heat. Remove from the heat.
3. Combine the tomatoes, onion and garlic in a large bowl.
4. Add the saucepan ingredients to the bowl.
5. Let the salsa stand, for the flavour to infuse, before serving. Prior to use, drain off excess liquid and stir through the olive oil.

Use over any pasta.

Ingredients:
1. 1/4 cup macadamia oil
2. 1 small onion chopped finely
3. 3-4 garlic cloves chopped finely
4. 750g ripe cooking tomatoes diced
5. 250ml tomato juice
6. 2 tbls of ground bush tomatoes
7. Half a bunch of finely cut basil leaves
8. Half teaspoon of ground Dorrigo pepper leaf


Method:
1. Gently fry the onion and garlic in the macadamia oil until brown.
2. Add the remaining ingredients and simmer slowly for 45 minutes or until thick.
