Paddymelon Lemon Myrtle Baked Cheesecake
Base:
250g plain sweet biscuits
125g butter melted
1/2 teaspoon nutmeg
Method:
1. Finely crush biscuits.
2. Add butter and nutmeg, mix well until well combined.
3. Spoon into prepared tin, press firmly into base and sides
4. Refrigerate for 20 mins or until firm.
Filling:
250g ricotta cheese
250g cream cheese
1 cup sour cream
3/4 cup caster sugar
2 tablespoons cornflour
3 eggs
1 tablespoon Lemon Myrtle
170g can (2/3 cup) passion fruit pulp (optional)
Method:
1. Beat cream cheese and ricotta
using electric beaters, until smooth.
2. Add sugar and cornflour, beat until smooth.
3. Add eggs one at a time, beating well after each addition.
4. Add sour cream, Lemon Myrtle, and pulp, beat until combined
5. Pour into tin and bake for 50mins or until set
6. Allow to cool, refrigerate until firm.

Paddymelon Chilli
Chicken with Lemon Myrtle
Ingredients: 1. 800g chicken breast or chicken marylands (bones removed)
2. 4 chillies, seeded and chopped
3. 3/4 cup Macadamia Oil
4. 2 teaspoons lemon
myrtle ground
5. 1tablespoon white
wine vinegar
6. 1 tablespoon mushroom
soy sauce
7. 1/2 tablespoons soy sauce
8. Juice of one lemon
9. 1/2 teaspoon Dorrigo pepper
Method:
1. Combine all marinade
ingredients in bowl, blend well.
2. Cover chicken with marinade and let chill for 2-3 hours.
3. Cook chicken on barbecue or griller for 10 mins each side or until
done.
4. Serve with your favourite salad and friends.

Lemon Myrtle Dressing - thanks to Sammy Ringer
Ingredients: - To make
4 cups
1. 1 litre 400ml white wine vinegar
2. 1/2 tsp salt
3. 2 tsp castor sugar
4. 2 tsp dried ground lemon myrtle leaf
5. 1/2 tsp ground mountain pepper
6. Quality Paddymelon oil
Method:
1. Combine the vinegar, salt and castor sugar, heat gently till the sugar
is dissolved.
2. Remove from heat and add the lemon myrtle and mountain pepper berry.
The heat will help release the natural oil in the lemon myrtle and pepper.
3. Once the mix is cool, slowly whisk in the oil.
This dressing will separate if left to stand so give it a good shake or
stir before using.
