Flathead Fish covered in Berbere Paste

Ingredients:

Paddymelon Marvin Berbere spice mix
Fresh Ginger
onions or shallots
garlic

Method:

Grind together in a blender or with a mortar and pestle until a smooth consistency like toothpaste.
Place flathead on silver foil and coat with paste. Place in fridge for 20 minutes. The longer the time the hotter the flavour.
Grill or BBQ fish until white.
Serve with salad.

Marvin is an Ethiopian chef who worked in our kitchens for many years before returning home. We have named this wonderful spice he made in his honour. It is truley an Ethiopian Classic spice mix.

To add a tantalising taste, rub onto red or white meats prior to roasting, grilling or barbecuing. A lttle oil may be added to blend to create a paste before applying
