Maintain the flavors by correct storage
Storage of bush foods varies depending on the food being stored. To make it easier we have broken it down into the following two sections,
Sun dried
Bush tomatoes would be the most common we are asked about. Sun dried bush tomatoes will keep for around 12 months if stored in a dry and well ventilated area.
You must make sure that all the moisture is removed from them prior to long term storage. This is easy to do by placing in the sun until they look like hard raisins. If you have no sun in your part of the world freezing also works.
Fresh limes or wet fruit
Wet fruit harvested straight from the tree and cleaned will keep for 12 months if frozen. This makes an excellent storage method for in season fruit. An example would be plums they can be frozen whole, sections or puree. This makes preparation a lot quicker when it comes time to use them.
