What does Guar Gum do?
Guar is a white free flowing powder. Completely soluble in hot or cold water to form a tasteless, odorless non toxic solution. Guar gum powder has 5-8 times the thickening power of starch.
Basis for a lot of the gluten free mixes on the market today. Mainly used in pharmaceuticals - binder in tablet mixtures, thickener and emulsifier in food products eg cheese spreads, ice cream and other frozen deserts.
Guar gum is constantly finding new uses in many areas of treatment some of these include speech pathology and fitness training. The water soluble portion, 85%, is called guaran and consists of 35% galactose, 63% manose and 5-7% protein.
